It's our Chinese New Year Eve tradition to make these dumplings from scratch. When the kids were little, we would hide a (cleaned) penny in one of them. The kids would eat so many dumplings to find the penny! This was my dad's recipe, modified by me!
Dough:
* 3 cups all-purpose flour, more for dusting
* 1/4 teaspoon kosher salt or 1 T (Ocem) consomme boullion
* 1 1/4 cups cold water
Filling:
* 1 pound ground pork, or ground beef
* 2 tablespoon soy sauce (or 2 T dark +2 t light)
* 1-2 tablespoon Chinese rice wine, or dry sherry
* 1/4 teaspoon freshly ground white pepper
* 2 tablespoons sesame oil
* 1/2 medium scallion, finely minced
* 1 1/2 cups finely shredded napa cabbage
* 1/3 onion, minced
* 2 teaspoons minced fresh ginger
* 1 clove garlic, minced
Sauce:
* 1 medium scallion, thinly sliced
* 2 small cloves garlic, minced
* 3 tablespoons light soy sauce
* 2 tablespoons Chinese rice vinegar
* 2 teaspoons sesame oil
* 1 teaspoon chile oil, or more to taste
